What's for dinner?



Help! Starting next week, 3 nights out of the week the kids will be off having sports practice (cheerleading and soccer). Anyone have any suggestions for quick bites to fix and grab before heading to practice? Or suggestions for dishes that I can fix on the weekend and reheat during the week?

Happy Friday! Sunday the temps is to be in the 60s - WOO HOO!!!!!!

  1. Oh my word! My week will like wise be full of soccer and cheer leading! And I am so over it! Here is one of my kids favorites!

    Another thing they like is: Chicken skewers. I season them with all spice and bake them. Then I mix equal parts honey-mustard and low fat mayo. They dip their chicken in that then dip them in crushed peanuts! Love it! (Hope you don't have peanut allergies!)

  3. Hello there! I came over from Southern Inspiration to say Congrats on winning her giveaway! If you click on the "recipe" label on my blog, I have a dish called Chicken Spaghetti...super easy and something we have at least once a week. You can either speed it up by pre-cooking the chicken and pre-chopping the onions and tossing them in the freezer until ready to use or prepare the whole thing, keep it in the fridge and simply re-heat. I also have Ham & Noodle casserole...another really good one! Blessings to you!

  5. When me and my sister were in HS we'd be crazy busy with dance, volleyball, soccer etc the best thing that my parents made was stirfrys with a side of plain rice. great for reheating too! all the best with the upcoming wks!

  6. Crock pot, boneless skinless chix breasts, jar salsa...cook all day falls apart like bbq, serve on flour tortilla with all the fixings or a hard taco shell! So easy!

  8. Taco soup is SO easy and you can even double the recipe and freeze it for later use. We have a local grocery store that has rotisserie chickens that are so good and they are $6. You can eat them as is with a veggie or shred the original one and use it in tons of recipes for a quick meal. I make a chicken enchilada casserole that literally takes 10 minutes and it is only 3 ingredients! Good luck!

  9. 2 words--Desperation Dinners. A friend gave me this cookbook when I went back to school at age 41 with 2 boys and hubby to still take care of. I have even emailed the authors, Beverly Mills and Alicia Ross to question them. The book cover says it all, "Home-cooked meals for frantic families in 20 minutes flat.

  10. Thanks for stopping by my place today. I'm your newest follower. This may not be the healthiest recipe ever but it certainly is an easy one. You know those bags of individually wrapped frozen burritos? Unwrap 8 or 10 (I forget how many fills a 9x13 pan) and lay them in a 9x13 pan, cover with foil and let defrost over night in the fridge. When you're ready to to cook it, cover it with a can of enchilada sauce (or chili I've used both) and some cheese. Bake covered in a 350 degree oven for about 20 to 25 minutes, then uncover and finish for another 5 or so. Easy, one pan, can be made the night before and the kids love it. Stop by again soon!

  11. Kraft foods website has a bunch of really good and easy recipes. When we have a lot of running around to do we usually just have turkey sandwiches or something like that for dinner. :)
